It begins much earlier: with the ingredients we choose, knowing where they come from, working with trusted suppliers and creating a menu that reflects the place in which we cook.

At El Cortijo, a restaurant in the heart of Estepona, that connection with our surroundings is an essential part of our approach to food. For us, sustainability is not about chasing labels or following a passing trend. It is something much simpler: understanding the product, respecting it and making more considered choices in the kitchen.¿Qué significa realmente trabajar con productos locales y de confianza?

What does it really mean to work with local produce and trusted suppliers?

For a restaurant, working with suppliers you know and trust means having a better understanding of what eventually reaches the table: where it comes from, its quality, its seasonality and the individual characteristics of each ingredient.

Using fresh, seasonal ingredients allows us to adapt our cooking to the moment when each product is at its best, while maintaining a closer relationship with the people who know those ingredients from the very beginning.

At El Cortijo, we have always championed a style of cooking deeply rooted in Andalusia, its land and its sea. Our menu brings together traditional recipes and more contemporary ideas, always with one thing in mind: food is best enjoyed around a table and in good company.

From anchovies in vinegar, garlic prawns and fried aubergines with sugar cane honey to rice dishes, grilled fish and carefully selected meats, tradition is our starting point, but never our limit.

Sustainability also means knowing what you buy

A more considered approach to cooking does not have to be complicated. Sometimes, it simply comes down to buying better.
Building long-standing relationships with suppliers makes it easier to select ingredients with greater care, understand their characteristics and use them more efficiently. It also gives both kitchen and supplier the flexibility to respond to availability, seasonality and the particular qualities of each ingredient.

That relationship of trust becomes especially important when working with fresh produce.

El Cortijo also has a long-standing connection with the world of meat. That experience allows us to select different cuts, ageing periods and preparations, and to understand that there is far more behind a good piece of meat than simply placing it on the grill.
The same applies to fish, vegetables and any other ingredient: the better you understand a product, the better you can cook it.

From Estepona to Málaga: the landscape can be tasted in the wine too

Our connection with the surrounding area does not end on the plate. In recent years, Málaga has seen a renewed appreciation of its winemaking culture, with wineries working with grape varieties and landscapes that are deeply connected to the province.

That is why, alongside some of Spain’s best-known appellations and a carefully selected range of international labels, El Cortijo’s wine list also makes room for wines produced in the Sierras de Málaga.

Local references from wineries such as Doña Felisa and Cortijo Los Aguilares bring wines from the province itself to the table, offering another way to discover Málaga through its food and wine culture.

Innovation does not always mean reinventing the wheel
Innovation in gastronomy is often associated with complex techniques, exotic ingredients or entirely new dishes. But sometimes, being innovative simply means looking at familiar ingredients from a different perspective.

Our salchichón tartare is a good example: taking a product deeply rooted in Spanish food culture and giving it a contemporary twist. The same applies to pairing beef short ribs with kimchi, introducing flavours from elsewhere while keeping classics such as oxtail stew, rice dishes, grilled fish and goat firmly on the menu.

At El Cortijo, we believe the future of cooking lies precisely in that balance: preserving identity, understanding ingredients better and remaining open to new ways of preparing and enjoying them.

Ingredients also change throughout the year.

Working with the seasons whenever possible means using produce when it is at its best in terms of flavour, ripeness and quality. It also keeps the kitchen evolving naturally rather than standing still.

Andalusian cooking and local produce in the heart of Estepona
El Cortijo has always had a very special connection with Estepona. The restaurant takes its name from the business run by the grandmother of Jorge, our owner, in the early 1960s.

Decades later, that bond with the town remains just as meaningful. From our home on Calle Caridad, in Estepona’s charming Old Town, our cooking continues to pay tribute to Andalusia, its produce and that deeply rooted tradition of gathering around a table and sharing food together.

Because perhaps one of the simplest ways to innovate is also one of the oldest: knowing where our food comes from, treating it with care and allowing the ingredients to speak for themselves.

Sustainability in a restaurant goes far beyond simply reducing plastic, recycling or monitoring energy consumption.
